WHITE CHEDDAR GARLIC MASHED POTATOES

1 pound potatoes (your favorite)
1 head garlic (peeled)
2 tablespoons unsalted butter (room temperature)
1/2 cup low-fat sour cream
1/4 cup heavy cream
1/2 cup white cheddar cheese (grated)
salt and pepper to taste

Boil the potatoes and garlic until the potatoes are fork tender, about 20-30 minutes. Drain the potatoes and garlic and mash.

Mix in the butter, sour cream, heavy cream and cheese. Season with salt and pepper. Serves 4
