CHINESE BARBECUED CHICKEN

2 tbsp hoisin sauce
2 tbsp cider vinegar
1 tbsp plus 1 tsp Dijon mustard
2 tsp soy sauce
2 tsp peanut oil
1/4tsp freshly ground black pepper

4 bone-in chicken thighs, trimmed of excess fat
4 bone-in chicken drumsticks
1 tsp kosher salt
1/2 tsp freshly ground black pepper

To prepare sauce: In a small bowl, whisk sauce ingredients until smooth.

Prepare grill for Indirect Medium heat.

Season chicken thighs and drumsticks evenly on both sides with salt and pepper. Sear chicken pieces over Direct Medium heat, skin side down first, until golden brown, 8 to 10 minutes, turning once or twice. Move chicken pieces over Indirect Medium heat and cook for 10 minutes. Brush both sides with a thin layer of sauce.

Grill over Indirect Medium heat until juices run clear and meat is no longer pink at bone, 10 to 20 minutes more, brushing with sauce and turning occasionally. Serve warm or at room temperature. Serves 4
