SPICY CHICKEN APPETIZER SHELLS

8-10 jumbo dried pasta shells, cooked al dente and drained
2 oz cream cheese
1/4 cup chunky salsa
1 tbsp chopped fresh cilantro
2 tbsp toasted almond or pine nuts, coarsely chopped
1 cup diced cooked chicken
Salt and pepper, to taste
Fresh cilantro, garnish

While pasta is cooking, combine cream cheese, salsa, chopped cilantro and chopped nuts. Mix well. Add diced chicken and season with salt and pepper.

Drain and rinse cooked pasta. Stuffed shells with filling and garnish with whole cilantro leaf. Refrigerate until ready to serving.

NOTE: Remove from refrigerator at least 15 minutes before serving.
