TURKEY ENCHILADA BAKE

2 tbsp butter
1/2 cup onion, chopped
1 garlic clove, minced
1/2 cup sliced olives
1/4 cup chopped green chiles
1/2 cup sour cream
1 can cream of chicken soup
1 1/2 cup cubed, cooked turkey or chicken
1 cup shredded cheddar cheese
8 corn or flour tortillas
1/4 cup oil
1/4 cup milk

Preheat oven to 350. Melt margarine. Saute onion and garlic in margarine until tender. Stir in 1/4 cup of ripe olives, green chiles, sour cream, and soup. Mix well. Reserve 3/4 cup of sauce. Set aside.

In remaining sauce, fold in turkey and 1/2 cup of cheese. In medium skillet, heat oil; lightly fried tortillas. Fill tortillas with turkey mixture. Roll up. Place, seam side down, in ungreased 12 x 8-inch baking dish. In small bowl, combine reserved 3/4 cup of sauce and milk. Spoon oven tortillas. Bake at 350 or 30 to 35 minutes.

To serve: Sprinkle with remaining 1/2 cup cheese and 1/4 cup olives. Serves 6 to 8.
