COUNTRY KNACKWURST DINNER

1 medium-size bunch broccoli, cut into pieces, about 1 1/4 lb
Vegetable oil
1 small onion, chopped
5 medium potatoes, cut into bite-size chunks
6 knackwurst, each cut into thirds
1/2 tsp salt
1/4 tsp pepper

In a skillet over medium heat, 1 tbsp oil and cook broccoli with 1/4 cup water, covered until lightly browned and just tender-crisp, about 5-10 minutes. Remove to a bowl.

In same skillet, in 2 more tbsp oil, cook potatoes with salt and pepper, 10-15 minutes until golden brown, stirring occasionally, and potatoes will still be firm. Add onion and 1/2 cup water, cover and cook 5 minutes. Add sausage; cover and cook 5-10 minutes or until potatoes are fork-tender and sausage are lightly browned, stirring occasionally. Remove cover, stir in broccoli and heat through.
