BRUSSELS SPROUTS WITH BACON
Category: Brussel Sprouts
1/2 lb fresh or frozen Brussels sprouts, trimmed ends
4 slice bacon or pancetta
1/2 oz unsalted butter
2 oz cheddar cheese, diced
2 tbsp whipping cream
1/2 tsp dry mustard
Salt and pepper, to taste
1 egg yolk
Place sprouts in a saucepan covered in about 1/2 inch of boiling salted water. Cover saucepan and simmer until tender crisp, about 10-15 minutes.
Meanwhile, saute bacon until crisp; drain and set aside. Melt the butter over low heat in a saucepan and add cheese, stirring occasionally until melted. Add the cream, mustard, salt and pepper. Do not boil. Cover and remove from heat.
Drain sprouts and place in a dish. Place in a warm oven and return the cheese sauce to low heat; stir in yolk and continue stirring until the sauce begins to bubble. Pour the cause over the sprouts, crumble the bacon and sprinkle on top. Serve at once.
