CAJUN SHRIMP & ARTICHOKE DIP

1 cup low-fat mayonnaise
1 cup low-fat sour cream
2 tsp Cajun seasoning
1/2 lb cooked, peeled & deveined shrimp, coarsely chopped
2 (6 oz ea) jars marinated artichoke hearts, drained & chopped
1/3 cup drained & coarsely chopped sun-dried tomatoes
3 scallions, white & green parts, finely chopped
Salt & freshly ground black pepper, to taste

Mix the first 3 ingredients in a medium bowl. Add the remaining ingredients. Cover and refrigerate to blend flavors, at least 1 hour and up to overnight. Transfer to a serving bowl; serve chilled. Makes 3 1/2 cups. Note: Do not substitute the low fat mayonnaise or sour cream.
