PUMPKIN SPICE CAKE

1 plain spice cake mix
1 (3.4 oz) pkg vanilla instant pudding mix
1 cup pumpkin
1/2 cup vegetable oil and water
3 large eggs
1 tsp cinnamon
1/2 tsp ground ginger

Butter Cream or Orange Cream Cheese Frosting
Chopped nuts

Preheat oven to 350. Spray a 13x9 inch baking dish with cooking spray. Set aside.

Place ingredients in a mixing bowl and blend on low speed for 1 minute. Increase mixer speed and beat for 2 minutes more. Pour the batter into prepared pan. Bake for 32-35 minutes. Remove pan from oven and place on a wire rack to cool for 20 minutes. Frost and sprinkle with nuts if desired.
