DIRTY RICE WITH SAUSAGE

1/2 lb Italian sausage, sliced
1 small onion, finely chopped
21/4 cups water
1 small tomato, coarsely chopped
1 package Lipton Cajun Sides - Dirty Rice

In 12 inch skillet, brown sausage over medium-high heat; drain if needed. Add onion and cook, stirring occasionally, 2 minutes. Add water and tomato and bring to a boil over high heat. Stir in Dirty Rice. Continue boiling over medium heat, stirring occasionally, 7 minutes or until rice is tender. Garnish, if desired, with chopped parsley. Serves 2
