DILLED SHRIMP

Category: Seafood

Shrimp:
1/4 cup salt
1/3 cup sugar
1 large bunch fresh dill, or 1/4cup dried dill
2 lb medium shrimp (30 to 40 per lb)

Marinade:
2 tbsp vegetable oil
1 tbsp white wine vinegar
1 tbsp minced fresh dill or 2 tsp dried dill
1/4 tsp salt
Dash pepper
Fresh dill sprigs or heads, for garnish

To prepare shrimp: In a deep pot, boil 2 quarts water. Add first 3 ingredients. Drop in shrimp and boil until they turn bright pink, about 3 to 5 minutes. Remove shrimp from water and let cool. Then drain, peel and devein shrimp and reserve in a large bowl.

To prepare marinade: In a small bowl, combine vegetable oil, white wine vinegar, dill, salt and pepper. Pour over shrimp and toss until well coated. Cover and chill for 2 to 4 hours, or overnight. When ready to serve, turn shrimp out to a shallow serving platter, garnish with dill and serve. Serves: 12
