SIZZLING SICILIAN SHRIMP

1 tbsp olive oil
3 cloves garlic, minced
1 1/2 lb shelled shrimp, deveined
Salt and pepper
1/2 cup white wine or chicken broth
1/4 cup pitted, sliced black olives
1/2 tsp oregano
Pinch cayenne pepper
Juice of 1 orange
1 tbsp butter

Heat oil in a skillet over medium-high heat. Add the garlic and saute 2 minutes. Add the shrimp, season with salt and pepper and saute until pink an curled, about 3 minutes. Remove from pan and cover to keep warm.

Add the wine to the pan. Stir to scrap up browned bits from the bottom of the pan. Add the olives, spices and orange juice; let the liquid reduce by half. Swirl in the butter and pour the sauce over the shrimp. Serves 4
