CARBONARA SAUCE

1 tbsp olive oil
1-2 clove garlic, minced
Black olives, scallions, smoked bacon, ham or prosciutto, mushrooms, sliced
1 tsp red pepper flakes
1/4 cup dry white wine (optional)
1/4 pint each cream and milk
1 egg, beaten
1/2 cup grated parmesan
1 tbsp cornstarch dissolved in 1 tbsp cold water
Salt and pepper, to taste
Parsley and extra grated parmesan cheese, garnish
Saute garlic, scallions, ham, mushrooms and pepper flakes in olive oil. Add the wine and continue to cook for about 1 minute more. Whisk together beaten egg, milk, cheese and seasonings. Boil the beaten mixture an add the dissolved cornstarch, stirring constantly until the sauce is thickened. Incorporate olives and ham mixture (NOTE: You can sprinkle over the pasta and pour sauce on top if desired.) and serve with desired pasta. Sprinkle with parsley and cheese.
