SEARED SCALLOPS WITH BACON AND SCALLIONS

4 slices bacon
18 sea scallops
Salt and pepper
2 tbsp olive oil
4 scallions, chopped

Crisp bacon in frying pan and chop, set aside. Season scallops with salt and pepper.

Heat some of the oil in a skillet and place 9 scallops in the pan approximately 1 inch apart. Sear 2 minutes on each side, until caramelized and opaque. Transfer to platter and cover loosely with foil. Repeat with remaining oil and scallops.

To serve, on top of scallops scatter with bacon crumbles and scallions. Serve with toothpicks. Makes 18 bites.
