SWEET AND SOUR MEATBALLS VIII

1 (20 oz) can pineapple chunks in juice, drain and reserve juice
2 tbsp butter and packed brown sugar
1 tbsp cornstarch
2 tbsp cider vinegar
1 tbsp soy sauce
1/2 tsp ground ginger
2 medium green and/or red bell pepper, cut into 1 inch pieces
2 (1 lb) pkg frozen precooked meatballs, thawed
Preheat oven to 350. Combine reserved pineapple juice and next 6 ingredients in a saucepan. Cook over medium heat, stirring occasionally, until mixture is thickened and bubbly, about 4-6 minutes. Boil, stirring constantly, 1 minute.
Place sauce, pineapple chunks, pepper and meatballs into an ungreased 2-quart casserole; stir gently to coat. Cover; bake for 25-30 minutes or until meatballs are heated through.
