SHANGHAI CHICKEN WINGS

2-3 lbs chicken wings
1/3 cup water and soy sauce
2 tbsp brown sugar
1 tbsp dry sherry
1 tsp finely minced fresh ginger

Combine all ingredients in a cooking pot. Bring to a boil and reduce heat, cover and simmer, stirring occasionally, about 20 minutes. After 20 minutes, uncover, increase heat slightly and continue cooking, stirring often, for about 15 minutes, or until the sauce has become rich and a thick glaze forms. Toss wings to coat. Good served hot or cold. Makes 18-24 appetizers.
