GERMAN POTATOES AND FRANKS

3 medium potatoes, cubed and cooked
1/4 cup chopped onion and butter
1/4 cup flour plus 2 tbsp
1/2 tsp salt
1/4 tsp thyme and pepper
2 cups milk
4 franks, sliced
1 cup frozen peas, drained
3 tbsp dry bread crumbs
1 tbsp butter, melted

Saute onion in butter until tender. Stir in flour and seasonings. Gradually add milk and stir until smooth. Cook, stirring constantly, until mixture is slightly thickened. Place half the franks in bottom of a 2 quart casserole.

Add half the potatoes, half of peas and half of sauce. Combine crumbs and butter. Sprinkle over sauce. Bake at 350 for 20-30 minutes or until crumbs are lightly browned. Serves 4
