SIMPLY SHRIMP

2 lb large shrimp, peeled and deveined
6 tbsp butter, melted
4 tbsp olive oil
3 tbsp lemon juice
3 cloves garlic, minced
Salt, to taste
1/4 - 1/2 tsp chopped fresh parsley
French bread
Lemon slices, for garnish
Preheat broiler. Place oven rack about 4-5 inch from heat element. Peel and devein shrimp. Rinse and pat dry with paper towels. Place in a 13x9 inch baking pan.
In a separate bowl, combine melted butter and next 5 ingredients. Pour over shrimp and roll shrimp around in butter mixture to coat. Keep shrimp in a single layer. Broil about 2 minutes. Remove from oven, turn shrimp over. Drizzle with wine or sherry and return to broiler. Broil for an additional 2-5 minutes or until shrimp are cooked. Do not overcook. As soon as you take the dish from the oven, sprinkle with fresh parsley and garnish with lemon slices. Serve with French bread. Serves 4-5
