SHRIMP WITH LEMON GARLIC SAUCE

1 lb large shrimp, peeled and deveined
1 1/2 cups milk
2 egg yolks
1 1/2 tbsp lemon juice
1 tbsp chopped parsley
3 clove garlic, crushed
2 tsp chopped chives
1/2 tsp salt and dry mustard
1/8 tsp ground red pepper
1/3 cup butter, melted
1 cup oil and flour
1/4 tsp salt
1/8 tsp pepper

Place shrimp in a shallow pan; cover with milk. Let stand in refrigerator for 20 minutes. Position knife blade in food processor; add next 8 ingredients to bowl and top with cover. Process 30 seconds or until well mixed. With processor running, add butter through food chute; process 1 minute or until sauce is thickened. Set aside.

Heat oil in a large skillet. Combine flour, salt and pepper. Drain shrimp and dredge in flour mixture. Fry shrimp in hot oil until golden brown, turning once; drain. Arrange shrimp in 4 baking dishes and top with sauce. Broil shrimp 30-45 seconds. Serves 4
