CASSEROLE FLORENTINE

4 cups cook noodles or favorite pasta
1 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
1 can cream of mushroom soup
1 clove garlic, minced
1/2 tsp each dried tarragon and marjoram
Salt and pepper, to taste
1 lb sweet Italian sausage, cooked, drained and chopped
1 large onion, coarsely chopped
1 egg
1 (15-16 oz) pkg ricotta cheese

Garnish
1 tomato, seeded and chopped
Parsley, chopped

Pour noodles into a butter 3 quart flat casserole. Combine next 7 ingredients and spread evenly over noodles. Sprinkle chopped sausage onion on top. Blend egg into ricotta and spread over all. Bake at 375 for 25-30 minutes or until golden, allow to cool slightly. Garnish. Serves 6
