FLUFFY VANILLA CINNAMON FRENCH TOAST WITH BANANAS AND ALMONDS

12 eggs
2 cups milk or half-and-half
1 1/2 tsp vanilla extract
2 tsp cinnamon
24 slices sourdough bread, 1/4 – 1 inch thick
Butter
12 large bananas
Powdered sugar
1/2 cup almonds, finely copped

Whish together first 4 ingredients until light and frothy. Dip bread slices in egg mixture and place on greased baking dish. Pour any leftover egg mixture over bread slices. Cover and refrigerate overnight.

Next day, saute bread in butter in a skillet or griddle until light brown and crispy on both sides. Slice bananas on top, sprinkle with powdered sugar and garnish with almonds. Serves 12
