MOMS FAVORITE MEATLOAF

3 tbsp olive oil
3 clove garlic, minced
1 medium onion, chopped
1 cup minced celery and carrots
1/2 lb minced mushrooms
1/2 cup chopped parsley and dry red wine
1 cup bread crumbs and milk
1 1/2 lb ground beef
1 lb ground pork
1/2 lb mild Italian sausage
2 eggs, beaten
2 tsp paprika
Salt and pepper, to taste
In a frying pan, saute first 3 ingredients until transparent. Add minced vegetables and saute until browned, about 5 minutes. Add red wine and simmer until liquid cooks down, set aside to cool.
Meanwhile, soak bread crumbs in milk about 10 minutes. In a large bowl, mix together everything and put into 2 loaf pans. Cover with parchment paper then foil. Bake at 350 for 30 minutes and reduce heat to 300 for 30 minutes. Remove from oven for 10 minutes before slicing.
