APPLE SALAD WITH RADICCHIO, ROQUEFORT & WALNUTS

2 lg Golden Delicious or Cortland apples, cored and chopped
1 sm head radicchio, chopped
2 Belgian endives, chopped
1 c chopped arugula
1/8 c thinly sliced red onion
2 Tbsp extra virgin olive oil
2 Tbsp freshly squeezed lemon juice
2 Tbsp apple cider vinegar
1 clove garlic, minced
1/4 tsp kosher salt
1/8 tsp freshly ground black pepper
2 oz Roquefort cheese, crumbled (about 1/3 c)
2 Tbsp chopped walnuts, toasted

Mix together apples, radicchio, endive, arugula, and onion in large bowl.

Whisk together oil, lemon juice, vinegar, garlic, salt, and pepper in small bowl. Toss with apple mixture, Roquefort, and walnuts. Serves 4
