HONEYDEW SHRIMP APPETIZER

1 small honeydew, cut into small cubes
16 medium shrimp, boil, shelled and cooked
1 1/2 tbsp lemon juice

Dressing
1/2 cup ricotta cheese
6 tbsp buttermilk
Salt and pepper, to taste
1 tsp lemon juice or vinegar
2 1/2 tsp snipped fresh dill

Combine melon and shrimp with lemon juice.

In a blender, whip the cheese with a few tbsp buttermilk, gradually adding more buttermilk until the mixture achieves the consistency of heavy cream.

Transfer the mixture to a small bowl and add salt and pepper, lemon juice or vinegar and dill. Pour the dressing over the melon and shrimp. Toss and chill the mixture for 1 hour before serving.

To serve, arrange the mixture on a crisp red lettuce leaf.
