PUMPKIN UPSIDE DOWN CAKE

Filling
3 large eggs
2 (1 lb) cans pumpkin
1 tsp nutmeg
1/2 tsp ground ginger

Topping
1 yellow cake mix
3/4 cup butter, melted
1 cup pecans, chopped

Whipped cream

Preheat oven to 350. Make filling. In a medium bowl, lightly beat eggs. Add remaining filling ingredients; stir until well combined. Pour into an ungreased 13x9 inch baking pan.

Topping: Sprinkle dry cake mix evenly over filling. Drizzle with butter evenly over cake mix. Bake 30 minutes. Remove form oven and sprinkle nuts on top. Return to oven and bake 30 minutes longer or until topping is golden brown. Let cake cool completely on wire rack. Serve with whipped cream.
