SUMMER SPLENDOR CHICKEN SALAD

2/3 cup red onion, finely chopped
6 tbsp mayonnaise
4 tbsp fresh cilantro, chopped
6 tsp fresh lime juice
1/2 tsp chipotle pepper sauce, salt and pepper
16 oz grilled chicken breast, cut into 1 inch cubes
2 large ripe tomatoes, halved, insides removed

Mix onion, mayonnaise, cilantro, 2 tsp lime juice, pepper sauce in a medium bowl. Add chicken and blend well. Season with salt and pepper.

Brush avocado halves with remaining lime juice. Arrange avocado halves, cut side up, on a bed of lettuce on serving plate. Mound chicken salad on each avocado half. Serves 4
