HOT BUTTERSCOTCH PUDDING

Category: Pudding / Brulee / Flan

Sauce:
1/4 cup brown sugar
1 2/3 cups water
2 tablespoons butter
1/2 teaspoon salt

Batter:
2 tablespoons butter
3/4 cup brown sugar
1/2 cup milk
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon salt
1 cup flour
1/2 cup chopped nuts

To make sauce, melt and mix together the brown sugar, water, butter and salt. Set aside.

To make batter, melt butter. Add brown sugar, milk and vanilla. Stir well. Add baking powder, salt, flour and nuts. Beat until smooth. Drop by teaspoonfuls into sauce. Bake at 350 degrees for 40 to 50 minutes.

Note: For chocolate pudding, use white sugar and 2 tablespoons cocoa.

Makes about 6 servings.
