APPLE PIE A LA MODE COOKIES

Cookie:
1 3/4 cups all-purpose flour
1/2 teaspoon cinnamon
1/2 cup butter or shortening
1/2 cup French vanilla powdered coffee creamer
2 tablespoons milk
1 cup sugar
1 large egg
1/2 teaspoon vanilla

Apple Filling:
2 cups shredded apples (Granny Smith or another crispy apple)
3 tablespoons cornstarch
1/8 teaspoon salt
1/4 cup sugar
1/4 cup water
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Preheat oven to 350 degrees; grease cookie sheet.

Sift together flour and cinnamon. Set aside. Cream together butter, creamer, milk and sugar. Blend in egg and vanilla.

Add dry ingredients slowly to wet mixture and blend thoroughly. Chill. Meanwhile, make apple filling.

Apple Filling: Mix filling ingredients; cook over medium heat, stirring constantly, until thick and clear and apples are tender. (If too juicy add small amount of powdered sugar.)

Shape cooled mix into rounded teaspoon-sized balls and place on greased cookie sheet. Bake 7 to 10 minutes at 350 degrees.

Fill center of cooled cookie with filling.

Makes about 2 dozen.
