CHOCOLATE CHIP SHORTBREAD COOKIES

1/4 cup granulated sugar
1 cup butter, softened
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 cups flour
1/4 cup cornstarch
1/2 cup mini semisweet chocolate chips
Preheat oven to 300 degrees.
Pour the granulated sugar into a small bowl and set aside. Beat butter, brown sugar and vanilla until light and fluffy. Gradually blend in flour and cornstarch. Stir in chocolate chips.
Form dough into 1-inch balls and place on a parchment-lined baking sheet 2 inches apart. Dip the bottom of a drinking glass into granulated sugar and press down gently on each cookie to flatten.
Bake 25 to 30 minutes or until edges of the cookies start to brown. Remove to a wire rack to cool. If desired, sprinkle each cookie with additional granulated sugar.
Makes 3 dozen 2-inch cookies.
