APPLE SLICES

3 lbs tart apples, peeled and sliced
1 cup water
1 1/2 cups sugar
1 tsp cinnamon
1/2 tsp salt
2 tbsp cornstarch
1/4 cup water

Crust
2 cups flour
1/2 tsp baking powder and salt
¾ cup shortening
2 egg yolks, beaten
1 tsp lemon juice
1/2 cup water

Glaze – combine until well blended
1 cup confectioners sugar
5 tsp lemon juice
1 tsp vanilla

Bring water sugar and salt to a boil. Add apple slices and cook slowly until partially done. Blend cornstarch and water and add to hot mixture. Cook 5 minutes stirring gently.

Crust: Cut shortening into flour, baking powder and salt as for a pie crust. Mix lemon juice, egg yolks and water; sprinkle with flour mixture, blending light. Divide dough into two parts. Roll first dough in a jelly-roll pan. Fill with apple mixture. Pat top crust on seal edges. Cut top for steam vents. Bake at 450 for 20 minutes. Reduce heat to 350 for 30 minutes. When cool ice with glaze and cut into squares.
