SCALLOPS WITH BROCCOLI

4 cups broccoli flowerets
5 tbsp butter, butter
1/3 cup sliced green onion
1/2 cup diced red pepper
1 lb scallops
1 tbsp lemon juice
2 tbsp sherry
3 tbsp flour
1 cup milk
1/2 cup light cream
1/2 tsp salt
1/2 cup shredded Swiss cheese

Steam broccoli until barely tender, about 4 minutes. In a skillet, melt 2 tbsp butter. Add onion and pepper, saute 2 minutes. Add scallops and continue to cook for 3 minutes. Stir in lemon juice and sherry, cook 1 minute longer. Remove from heat.

In a saucepan, melt butter and stir in flour. Blend in milk and cream with a whisk. Cook until it comes to a boil and thickens. Simmer 1 minute, remove from heat. Season with salt and pepper. Mix with broccoli and scallop mixture. Spoon into a greased 2 quart casserole and top with cheese. Bake, uncovered, at 350 for 20-30 minutes or until sauce is bubbly. Serves 4
