SPICED PUMPKIN COOKIES

Cookies
1/2 cup butter, softened
1 1/2 cups packed brown sugar
3/4 cup canned pumpkin
1 egg
1 tbsp grated orange zest
1 1/4 cups and whole-wheat flours
1 tsp pumpkin pie spice and baking
1/4 tsp salt
2 cups chopped walnuts

Icing
1/2 cup butter
1 cup firmly packed brown sugar
1/4 cup whipping cream
1 tbsp light corn syrup
1 cup softened confectioners sugar

Cream together butter and sugar until fluffy. Add next 3 ingredients and beat until smooth. In a medium bowl, combine dry ingredients and add to creamed mixture, stir until soft dough forms. Stir in nuts. Wrap in plastic wrap and chill for 4 hours or firm enough to handle. Preheat oven to 400. Drop tbspfuls of dough 2 inch apart on greased baking sheet. Bake 10-12 minutes or until golden brown. Transfer to wire rack to cool.

Icing: Melt butter, stirring constantly, add next 3 ingredients and cook until mixture comes to a boil. Boil 1 minute. Remove from heat; pour into a heat-resistant medium bowl. Add sugar and beat until smooth. Ice cookies and allow icing the harden before storing in air tight container.
