NEW ENGLAND SCALLOPS

5 tbsp butter, melted and minced raw spinach
2 tbsp minced onion and celery
3 tbsp minced lettuce and dry bread crumbs
1/4 tsp herb-blend for fish
Pepper
1/2 tsp salt
3 tbsp butter, cut into small pieces
35 sea scallops, about 2 – 2 1/2 lbs
Combine ingredients except last 2 ingredients; mix well. Heat gently; but do not let butter brown. Place scallops on a foil-lined broiler pan, dot with butter and broil until lightly browned, about 6-10 minutes. Place 6 scallops in individual ramekins. Scatter spinach mixture over all. Broil until thoroughly heated. Serve at once. Serves 6
