APPLE GOODY

1/2 cup Vegetable Oil
1 egg
1 cup sugar
1 cup unsifted flour
1/2 tsp baking soda, salt, cinnamon and vanilla
1 tbsp dark rum, or brandy
2 Granny Smith apples, peeled and cored (or pippin apples)
1/3 cup chopped nuts
Preheat oven to 350. Beat oil with egg until foamy. Stir in sugar, flour, baking soda, salt, cinnamon, vanilla, and rum. Finely chop 1 1/2 apples and add to batter with nuts. Batter will be stiff. Spoon mixture into a greased 9 inch pie pan. Slice remaining 1/2 apple and press into batter to form a swirl pattern. Bake for 35 to 40 minutes. This can be served warm with ice cream, hard sauce, or eggnog, as a dessert. It is also good cold.
