ROASTED PORK AND KRAUT

1 (4 lb) bone-in or boneless pork roast
1 clove garlic, minced
1 medium onion, halved and sliced thin
2-3 lb sauerkraut
4-5 knockwursts
2 tbsp cracked pepper
1 cup water

Rub fat side of roast with pepper and minced garlic. Place in a large roasting pan. Roast, uncovered, for 20 minutes at 425. Reduce oven temperature to 325 and continue to roast for 90 minutes.

After 90 minutes, surround roast, undrained sauerkraut, onion and knockwurst. Add water and roast an additional 30 minutes. Knockwurst will crack open when done. Serve with mashed or boiled potatoes.
