APPLE DUMPLINGS WITH LEMON SAUCE

1/2 cup packed brown sugar
1 1/2 tsp cinnamon
7 tsp butter, softened
7 medium apples, cored, peeled
2 cups baking mix
1/3 cup ice water
1 tbsp oil
2 cups water
1 cup sugar
1 tbsp butter
1/2 tsp cornstarch
1 tbsp lemon flavoring
Mix brown sugar and cinnamon in a small bowl. Place 1 tsp butter and 2 tsp brown sugar mixture in each apple. Combine baking mix, water and oil; mix well. Roll to a 1/4 inch thickness on floured waxed paper. Cut into 7 squares. Place 1 apple on each square. Bring corners up to enclose apples; fasten with toothpicks. Place in a greased baking dish.
Combine 2 cups water and sugar in saucepan. Bring to a boil, stirring until sugar dissolves. Add 1 tbsp butter and cornstarch dissolved in a small amount of cold water. Cook until thickened, stirring constantly. Stir in lemon flavoring. Pour over dumplings. Bake at 350 for 1 hour.
