Spicy Honey Glaze:
1 tsp dry mustard
3 tbsp white wine vinegar or cider vinegar
1/4 cup honey
1 tsp hot sauce
1 tbsp salsa
2 tbsp chopped shallots or green onions
1 tsp dijon mustard
1/2 tsp dried thyme
1/4 tsp dried oregano
1/2 small onion, crushed and minced
Salt to taste
1/4 tsp ground white pepper
4 boneless, skinless chicken breast halves
Preheat oven to 400. Line a baking pan with foil; lighly coat foil with olive oil. Set aside.
Place dry mustard in a small bowl. Sti rin vineger. Add remaining ingredients and mix well. Set aside. (Sauce can be prepared the night before.)
Place chicken in pan and lightly score both sides. Brush with half the glaze and bake for 10 minutes. Turn chicken and brush with remaining glaze. Continue to bake for about 10 minutes. Serve with rice.
