APPLE CHEESE STRUDEL

1 pkg frozen phyllo dough, defrosted
1/3 cup butter
1/2 cup sugar
3 egg yolks
Zest of 1 lemon
3/4 lb cottage cheese, strained
1/3 cup raisins soaked in 2 tbsp rum
1/4 cup finely chopped walnuts
2 small cooking apples, peeled, cored and sliced, granny smith are good
1/2 cup sour cream
4 egg whites, stiffly beaten
1 tsp ground cinnamon
Melted butter for phyllo dough
Cream butter and sugar until light and fluffy. Gradually beat in the yolks and mix until pale yellow. Add next 7 ingredients and enough sour cream to combine mixture. Slowly fold in egg whites.
Take one sheet of the phyllo dough and brush half with butter then fold in half. Pl ace another sheet on top, brush with butter and fold in half. Place another sheet for a total of 3. Take half of apple mixture and place on top. Roll phyllo into a tube. Repeat with remaining mixture. Bake at 350 until golden brown, approximately 15-20 minutes.
