CHOCOLATE PECAN SNOWBALLS

2 cups flour
2 tbsp unsweetened cocoa powder
1/4 tsp salt
1 cup pecans, toasted & finely chopped
1 cup butter
2/3 cup confectioners sugar
2 tsp vanilla extract
Additional confectioners sugar

In a medium-size bowl, combine the flour, cocoa, salt & pecans.

In a large mixing bowl, beat butter and confectioners sugar until light and fluffy. Add vanilla and mix well. Gradually add flour mixture, beating until dry ingredients are moistened. Gather into a ball, cover and refrigerate overnight.

Preheat oven to 325. Pinch of enough dough to shape 1 inch balls, place on ungreased baking sheets, 1 inch apart. Bake for 12 to 15 minutes or until firm to the touch and edges begin to brown. Remove to a wire rack to cool Sprinkle with confectioners sugar just before serving. Cookies will be firm.
