GARLIC SHRIMP SCAMPI WITH WHITE WINE

10 -large raw, shell-on shrimp, deveined and thawed
10 cloves garlic - chopped
1 cup all-purpose white flour
2 tbsp paprika
1/4 tsp cayenne pepper
1/2 cup clarified butter
1/8 cup white wine
2 tbsp butter
1/2 tsp kosher or sea salt
Combine flour, paprika and cayenne pepper in large bowl. Stir together. Toss in shrimp and stir to coat shrimp.
Preheat pan for 2 minutes. Pour clarified butter in pan and add garlic. Let cook for about 1 minute and then add shrimp. Sprinkle with salt. After 3 minutes, turn shrimp and cook another 3 minutes. Pour in wine and 2 tbsp butter. Cook until butter is melted.
Serve this recipe with a lightly chilled Pinot Grigio or Sauvignon Blanc.
