BAKED BEEF SHORT RIBS

2 tbsp olive oil
4 lbs beef short ribs
Salt and pepper
1 onion, chopped
2 leeks, sliced thinly
4 clove garlic, minced
1/2 cup each red wine and beef broth
1 (28 oz) can chopped tomatoes
1 tbsp each dried rosemary, thyme and chili powder
Preheat oven to 350. Heat the oil in a large skillet over medium-high heat and brown ribs on all sides, about 7 minutes. Season with salt and pepper. Remove ribs to roasting pan.
Add onions, leeks and garlic to skillet. Saute until they begin to brown, about 5 minutes. Add wine and broth; stir to remove any browned bits stuck to the bottom of the pan. Add remaining ingredients and bring to a boil. Remove from heat and pour over ribs in baking dish.
Cover with foil and bake for 2 hours or until they are tender, basting about every 30 minutes Bake uncovered, for 15 minutes. Remove from oven and skim off grease. Serve ribs topped with sauce.
