CHOCOLATE TRUFFLE LIME SANDWICH CRISPS

Chocolate Truffle Filing
1 cup semi-sweet chocolate chips
1 1/2 tbsp heavy cream

Lime Frosting
1 cup confectioners sugar
2 tbsp butter, softened
2 tsp grated lime peel
Approximately 4 tsp lime juice

21 toasted pecan halves

1 box Ritz crackers

Filling: Heat chocolate and cream in a microwave, stirring every 30 seconds until smooth. Cool slightly.

Frosting: in a small bowl, beat ingredients and enough of the lime juice to make a good spreading consistency.

To assemble: Spread chocolate between two crackers to make a sandwich. Spread frosting over tops and place a pecan on each.
