1 cup good-quality mayonnaise, such as Hellman's
4 teaspoons chopped capers (drained)
2 tablespoons chopped fresh tarragon
1 tablespoon whole-grain mustard
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice, or to taste
1 tablespoon Tabasco hot pepper sauce, or to taste
Mix all ingredients together. It will keep 3 to 4 days refrigerated. Makes about 1 cup.
