BUTTERCREAM ICING

2 cups butter, room temperature
2 cups sifted confectioners sugar
2/3 cup sweetened condensed milk
2 large egg whites
1/2 cup sifted confectioners sugar
1/2 tsp salt and vanilla extract
1/2 cup sifted confectioners sugar

Beat butter until creamy; gradually add sugar, beating until smooth. Add milk, beating until mixture reaches spreading consistency and is light and fluffy. Using a very clean bowl and beater, whip egg whites until stiff while adding the 1/2 cup confectioners sugar. Mix this meringue slowly into the butter mixture. Add vanilla and remaining sugar.

NOTE: This last amount of sugar can be doubled if stiffer icing is desired.
