TARRAGON GRILLED CHICKEN

8 boneless, skinless chicken thighs
1/2 tsp salt and pepper
1/4 cup Dijon mustard and olive oil
1 tsp grated lime rind
2 tbsp fresh lime juice
2 tsp dried tarragon

Sprinkle chicken with salt and pepper. Combine mustard and next 4 ingredients in a large resealable bag. Add chicken and seal. Chill at least 2 hours, turning once. Remove chicken from marinade, discarding marinade. Grill chicken, covered with grill lid, over medium-high heat for 10-12 minutes on each side or until chicken is done. Serves 4-6
