PINEAPPLE SHEET CAKE

Cake
1-1/2 cup sugar
2 eggs, lightly beaten
20 oz. can crush pineapple, drained
2 cup flour
1-1/2 tsp baking soda
1/2 tsp salt
Topping
1/2 cup butter
1 cup sugar
3/4 cup evaporated milk
1 tsp vanilla
1 cup chopped pecans
1 cup flaked coconut
To prepare cake, combine sugar, eggs and pineapple in a large mixing bowl. In another bowl, combine flour, baking soda, and salt; stir into pineapple mixture. Mix well and pour batter into a greased 9x13 inch baking pan. Bake at 350 for 35 minutes or until cake tests done.
While cake is baking prepare topping. Combine butter, sugar and milk in a saucepan and boil very slowly for 10 minutes. Stir in vanilla; add pecans and coconut. Spread over hot cake. Allow cake and topping to cool completely before serving.
