PESTO POTATO SALAD II

4 cups small red-skinned potatoes
1 cup Basil Pesto Dressing (recipe follows)

Cover potatoes with water, bring to a boil over medium-high heat and simmer until tender (15 to 17 minutes). Toss with dressing and serve. Serves 4-6

Basil Pesto Dressing
1 cup basil, stemmed and shredded
1 cup sour cream (nonfat works fine)
2 cloves garlic, chopped
1 organic lemon, juiced, rind grated
1/4 tsp black pepper and salt

In a blender or food processor, combine basil, sour cream, garlic, lemon juice and rind, pepper and salt. Process to a smooth paste.
