SEAFOOD JAMBALAYA

1/2 lb chorizo or hot pork sausage, sliced
2 large onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 cups cubed cooked ham
1 cup rice
1 bay leaf
1/2 tsp thyme and salt
3-4 drops hot pepper sauce
1 (16 oz) can tomatoes
1 lb shrimp, shelled
1 pint oysters
1 lb crab meat
1/2 cup fish stock or water

Saute sausage until fat is rendered. Add chopped vegetables and garlic and cook until lightly browned, stirring not and then. Add rice and cook and stir until rice is well coated with oil. Add spices, tomatoes and broth. Cover and simmer until rice about 20 minutes and then stir in the seafood. Cover and continue to cook until shrimp is pink and oysters start to curl, about 3-5 minutes. Taste and add more salt and pepper if needed.
