SAUCY SHORT RIBS OF BEEF

1-1/4 cups flour
2-1/4 lb beef short ribs
1/4 cup vegetable oil
4 cups onion, sliced
3 tbsp flour
2 cups hot water
1 tsp Worcestershire sauce
1 bouquet garni

Preheat oven to 325. Place 1 cup flour in a shallow bowl. Add salt and pepper to taste. Roll ribs in seasoned flour to coat. In a Dutch oven over medium high heat, saute ribs in oil until browned on all sides. Add 1/2 cup hot water, cover, and bake 2 hours. Add water if needed. Remove ribs and keep warm. Add onions to pan. Cook until tender. Push onions to one side and stir 3 tbsp flour into pan. Slowly stir in 1-1/2 cup water. Cook until bubbly. Add Worcestershire, bouquet garni, salt, and pepper to taste. Cook 5 minutes longer. Serve over ribs.

Serve with a hearty red such as The Crusher Cabernet or Petite Sirah, a Spanish Tempranillo, or a gutsy Rhone, Syrah, or Shiraz.
