SHRIMP SCAMPI SOUTHERN-STYLE

1/3 cup extra virgin olive oil
2 cloves garlic (more if desired) -- minced
2 lbs shrimp -- peeled
1/2 cup dry sherry or vermouth
3/4 tsp lemon pepper
3 tbsp lemon juice
3 tbsp chopped fresh parsley
16 oz angel hair pasta -- cooked according to pkg directions

In a large skillet over medium heat on stovetop, saute garlic in olive oil. Add shrimp and continue to cook for a minute or two until shrimp begins to turn pink.. Add sherry, lemon pepper, and lemon juice; simmer until liquid is almost absorbed. Sprinkle with parsley and stir gently to mix. Serve hot over angel hair pasta. Serves 8
