LEMON SQUARES

2 1/4 cups plus 6 tbsp flour, divided
1/2 cup confectioners sugar
1 cup cold butter, cut into small chunks
6 eggs, slightly beaten
1 1/2 tsp grated lemon rind
3/4 cup lemon juice
3 cups sugar
3/4 tsp baking powder
Additional confectioners sugar, garnish
Preheat oven to 325. Coat a jelly-roll pan with cooking spray. In a food processor, combine 2 1/4 cups flour, confectioners sugar and butter and pulse until mixture resembles fine crumbs. Press mixture evenly onto bottom and up sides of pan. Bake 15 minutes. Remove crust from oven and increase temperature to 350.
Filling: In a medium bowl, slightly beat the eggs. Add the lemon peel and juice. In a separate bowl, combine sugar, remaining 6 tbsp flour and baking powder. Stir into egg mixture. Pour mixture over the baked crust and return to oven. Bake 25-30 minutes or until center springs back when touched. Let cool 15 minutes. Put confectioners sugar in a sieve and sprinkle over top of bars. Cut into squares when completely cooled.
